Upgrade Your Next Dinner with Alexey's Salmon Recipe

Looking for an easy, healthy way to wow the crowd at your next dinner party, or just want a way to (literally) spice up your boring salmon fillet? Alexey's salmon recipe takes under 15 minutes from start to finish—including cleanup—but makes a big statement on a platter. Alexey made this for the Jukebox Cycling gravel crew in Bentonville ahead of Big Sugar, and it was an instant favorite.

You can use any size of salmon—go for a big family size one if you're hosting a party, or scale down (fish pun intended) for a smaller dinner. If you're vegan, you can even sub in tofu for an equally tasty dinner option!

To make:

-Preheat oven to Broil

-In a small bowl, combine 2 tablespoons chili powder, 2 tablespoons cumin and 4 tablespoons brown sugar (you can save leftover mixture for next time, just store in a baggie or tupperware!)

-Lay salmon on foil with light coating of oil underneath

-Sprinkle seasoning on top. You want it to be fully coated and slightly thick (but not too thick!)

-Put directly into oven about 1/3 of the way down from the broiler

-Cook for 7-10 minutes, depending on how thick or large your salmon is. When it's done, the salmon will be light pink throughout, and the seasoning will have blackened on the top as the brown sugar carmelizes. (You can make a cut in the middle to see if it's cooked through.)

Serve with: Steamed + sautéed broccolini or broccoli and rice is Alexey's preferred side dish selection!
